Simple Hassle free Paleo Coconut Milk

A little while back I was presented with a conundrum, I was sick of turning over the milk alternatives in the grocery store and finding literally dozens of ingredients, and often the first one was not even what it was portrayed as being (eg. Coconut milk should have coconut as the first ingredient, right? Or am I reaching too far here?!)

I did a lot of research and all the homemade nut milks would be insanely expensive to make using whole 10$ containers of nuts, or bags of coconut was just ridiculous to me! Plus a huge mess and hassle, having to strain the milk through cheese cloth and soaking nuts overnight. No thank you!

So I came up with my own alternative that is simple, quick and completely hassle free!

There is really no recipe, all you need is a can of the cleanest, and richest coconut milk you can find (I use Nature’s Choice which is in a BPA free can, and only contains Guar Gum, which I am cool with). Note: It’s a lot harder for me to find coconut milk as a lot of them have peanut warnings on them, but if that is not an issue for you, you should be able to find one that is only coconut milk!

Instructions

Add entire contents of full fat coconut milk (extra rich) to your blender and add 1/2 – 3/4 of a can of water to the blender. Blend on high for around 60 seconds and add to air tight container. Store in fridge for up to a week! That’s it!

You may need to adjust the ratio if your coconut milk is not very rich to begin with. If starting with very thin coconut milk you may only need to blend the contents of the can alone. I find getting the extra rich version give me more bang for my buck, as it is the same price as the other varieties.

Use in coffee, tea, baking and cooking as you would any other milk alternative!
