It sounds so fancy for something I threw together with leftovers! But it turned out so great, couldn’t not share! It even has a little anti-inflammatory bonus from the turmeric! Enjoy!

Recipe (1 serving)
- 2 Eggs, beaten
- 1/2 turmeric
- 1 Sausage of choice (already cooked!)
- 1/2 C spinach
- 1 clove garlic
- Half a large tomato
- Salt and pepper to taste
- Parsley for garnish
Start by sautéing sausage, spinach, tomato and garlic in some cooking oil, adding salt and pepper to taste. When fully cooked, set aside and whisk eggs with turmeric and salt and pepper, cook eggs like a simple omelet as pictured. Serve hot and your done!
