Best Ever Pot Roast

In my opinion this is the best pot roast ever, it also so happens it’s pretty much the first pot roast I’ve ever made like this. This is the only recipe I ever developed that needed no trial and error period. It turned out great the first time! Probably purely dumb luck, but Imma toot my own horn a little regardless! 😀 

Accidentally took a bite before taking a picture! That’s how good it is! 😛 


  • 3-4lb beef roast
  • 2 medium carrots (cut into large chunks)
  • 1 medium onion (cut into half circles)
  • 2 cups bone broth
  • 2 tbsp coconut oil
  • 1 tsp dry rosemary
  • 1 tsp dry thyme
  • salt and pepper to taste

Instructions (Prep time 20 mins, cook time 3 hours)

Pre-heat oven to 275F. Salt roast (room temp is best) and set aside. In a very hot cast iron dutch oven (med-high heat), melt oil and brown onions. Remove onions and set aside. Brown carrots and then set aside with onions. Sear roast until brown on all sides. Add bone broth and deglaze bottom of pan. Add spices, and let simmer for about 2 minutes. Turn off heat, place roast in pan and disperse carrots and onions around the edges. Put lid on pan and place in oven for 2.5 – 3 hours. Serve and relish in the amazing-ness!!!!
