Paleo Hashbrowns

Made these from scratch the other day and was so happy with how they turned out!

Any potato could be used but oriental yams are dryer so you wont need to wring them out. If using other kinds of potatoes add salt and grated potatoes to a bowl, mix and let stand for 10 minutes. Put in cheese cloth or dish towel and squeeze out water.


2 medium potatoes, grated

2 large eggs

1/2 cup tapioca flour

1/2 tbsp salt

1/2 tbsp dried parsley

pepper to taste

Mix all ingredients in a large bowl.

Form into approximately eight 4-5 inch patties. They should not be more than 1/2 inch think or they will not cook through.

Heat oil in a cast iron skillet on low/medium heat, fry patties until golden brown on both sides.

Serve hot with fave condiments!
